This is a microbiological blend:
- German Ale brewer's yeast with low ester production, dry and effervescent aftertaste Lactobacillus with mild acidityBrettanomyces with a distinctive aroma
creates the taste of a genuine Berliner Weisse. It is characterised by a slow fermentation, taking 3-6 months to develop the full aroma profile. Use a small amount of hops, or hops that have been stored for several years, as hops have a bactericidal effect.
